Hello and welcome!
We are Becky and Iryna — the two chefs behind The Copper Lemon! We are passionate about cooking and baking, and would love to share with you our delicious, mostly healthy recipes using fresh seasonal ingredients. What makes us unique is that we both have Eastern European roots, so one focus of our recipes will be on international cuisine. No boring box mac’n’cheese here! 😉
Our story dates back to 2012 when we met in Minneapolis, Minnesota, and became good friends. We quickly discovered that we both have many common interests, two of which were cooking and baking!
I’m from the beautiful state of Maine, ‘way up in Northern New England, where tall pine trees reach for the ocean sky, and where snow isn’t the way to get a day off from school (oh, and, yes, lobster). I’ve lived for a couple years in Bangkok, Thailand, and also for almost a decade (wow! 😉 ) in the outskirts of Minneapolis, (a real “foodie” town). Right now, I’m an ESL teacher, teaching third and fourth grade in Tucson, Arizona (hello, REAL Mexican food!). When I’m not at school (or in the kitchen!), I like to cuddle up with a good book, work on cross-stitch or quilting, play the piano and organ, or explore Arizona’s trails with my husband (on foot or in a Jeep!).
Cooking is my way to relax, de-stress, and be creative! Invite me somewhere, and my first question is, “What can I bring?” Since half of my extended family roots are from Eastern European countries, food is definitely our love language. We weren’t allowed to leave people’s houses without being stuffed (we may have capitalized on that as children to get to stay longer…”Mom, I’m hungry!”). My mom always had a big garden, and summertimes were divided between weeding and prepping produce to freeze or can. One of my favorite times as a kid was the day every fall when my mom would make applesauce. We’d cut thick slices of homemade whole-wheat bread, spread them with peanut butter, and top with warm, tangy applesauce — a wonderful supper! I still remember her letting me read her Betty Crocker cookbook and choose cookie recipes to make; even though she complained about the mess I made, she always let me bake. I love looking for new ways to change up favorite recipes and new techniques to try — and share!
I am from the beautiful Eastern European country of Ukraine. I came to the United States seven years ago without my family, friends, or anything that even remotely reminded me of home. After finishing my college degree, I married a feisty American guy and decided to stay in the US. Unfortunately my Ukrainian family was not able to visit during all of those seven years and, due to immigration regulations, I was not able to go home either. But in January of 2017 I finally received my Green Card (woohoo!) and for the first time in a looooong while I will be able to go home!! 😀 My husband and I are planning to go to the Ukraine very soon now!
I’ve loved to cook and create tasty food ever since I was a little girl. In my home country, cooking is a big part of our lives (and I mean, every day, 3-meals-a-day, home cooking style). My grandmother was a phenomenal cook her whole life, catering events and weddings. I remember seeing my grandmother’s passion for creating a warm home filled with delicious smells of fresh-baked bread and sizzling onions in the pan…oh, what an unforgettable smell that was! She would teach me how to make the dough and the filling for varenyky, how to put everything together and slowly drop each varenyk one by one into the boiling water. What a great sense of accomplishment it was when I tasted my own first varenyk! The whole family was so proud of me, and everybody said that the varenyky tasted exquisite for a little 5-year-old chef. As I grew, my mother taught me many more recipes and cooking techniques.
We would like to invite you to learn how to fill your home with the same delicious smells of warmth, coziness and love! After all, is there anything better than a home-cooked meal? 😉
